Pancake testing #29


I have been trying to replicate my mom's recipe for 29 years... This is not a low calorie recipe, but it's really good! Eat these pancakes ASAP after they are done, as they won't stay crispy for ever!

SERVES 2 adults

3 Eggs
1 cup Milk
1 1/3 cup Flour
1 TBSP Sugar
1 1/2 TBSP Fresh Baking Powder
1/2 TSP Baking Soda
1/2 TSP Salt
Vanilla to taste
Maple syrup for serving


In a large bowl, add the eggs, milk, sugar, vanilla, salt and whip vigourously.
Add flour, baking powder, baking soda and stir until smooth.

To cook, pour batter in a cast iron skillet with 1/3 cup Crisco at medium heat. Be extremely careful when you flip the pancakes, as the oil will splash up...
Serve on hot plate or heat up the maple syrup.
